I am on a paid plan that includes one Uptime monitor, but I'd like to have more.

Resolution
Every Sentry organization has access to a single Uptime monitor for free.
In order to enable more than 1 Uptime monitor you need to configure your pay-as-you-go budget (formerly "on-demand budget").
Any additional Uptime monitors will cost $1/monitor/month.
Certain plans do not allow you to configure a pay-as-you-go budget for example, our Developer (free) plan. Some other plans that prevent you from configuring a pay-as-you-go budget include:
Certain Sponsored plans
Certain legacy plans
Fly.io linked plans (that are currently in their free period)
Heroku partnered organizations
Organizations where the subscription is purchased from a 3rd party marketplace such as Amazon, or Google
