I want to change the title of my alert emails so that it shows different information.

You’re able to change the subject line for alert emails within your Project’s Email Settings by going to Project Settings > Alert Settings > Email Settings.

Email subjects can be a combination of any plaintext of your choice, as well as any of the following variables: $title, $shortID (part of the Issue ID), $projectID, $orgID, and ${tag:key}, which can include any tag from your issue, such as ${tag:environment} or ${tag:release} or ${tag:myCustomTag}.

Note that this won’t affect Workflow emails.
