I am seeing Average CPU Usage at ie. 220% but I thought the max could only reach 100%. How is that possible?

This is because this value is aggregated across multiple CPU cores. On a single-core processor, 100% would indeed be the maximum possible usage. However, modern devices, including smartphones and computers, typically have multi-core processors, and each of them can be utilized separately. So, for a quad-core processor, the max CPU usage would be 400%.
